Ingredients
1 medium head of green cabbage
1 large yellow onion
1/4 cup chicken stock (homemade or organic low sodium)
1/4 cup extra virgin olive oil
Coarse sea salt and black pepper
1/8 tsp crushed red pepper flakes (or to taste)
Directions
Begin by preparing the cabbage. Remove any damaged or wilted outer leaves from the cabbage head. Cut the cabbage into quarters and remove the core. Slice the cabbage into thin strips.
Peel and thinly slice the yellow onion.
Heat the olive oil in a large, deep skillet or Dutch oven over medium heat.
Add the sliced onion to the skillet and sauté until it becomes translucent and starts to caramelize, about 5-7 minutes.
Add the sliced cabbage to the skillet and stir well to combine with the onions. Season with a pinch of salt, black pepper, and crushed red pepper flakes.
Pour the chicken stock over the cabbage and cover the skillet. Reduce the heat to low and simmer for about 30-40 minutes, or until the cabbage is tender and has absorbed the flavors.
Check the seasoning and adjust with more salt, pepper, or red pepper flakes if desired.
Serve the braised cabbage hot as a side dish or as a main course with your favorite protein.
