Ingredients

1 large round slice of watermelon (about 1-inch thick)

1/2 cup of Greek yogurt

1/2 cup of mixed berries (strawberries, blueberries, raspberries)

2 tablespoons of shredded unsweetened coconut

A few fresh mint leaves for garnish

Directions

  1. Lay the slice of watermelon on a cutting board or large plate.

  2. Spread the Greek yogurt evenly over the watermelon slice, leaving a little space at the edges to mimic a pizza crust.

  3. Sprinkle the mixed berries over the yogurt.

  4. Sprinkle the shredded coconut over the berries.
