Ingredients

  • 1 (6oz) boneless, skinless chicken breast

  • Sea salt, to taste

  • 1 tablespoon olive oil

  • 1/4 teaspoon grated lemon rind

  • 1 tablespoon fresh lemon juice

  • 1/2 garlic clove, minced

  • 1/2 teaspoon fresh tarragon, minced

Directions

  1. Season the chicken breast with sea salt on both sides.

  2. In a small bowl, combine the olive oil, grated lemon rind, lemon juice, minced garlic, and minced tarragon. Mix well.

  3. Heat a skillet over medium-high heat and add the prepared mixture from step 2.

  4. Add the seasoned chicken breast to the skillet and cook for about 4-6 minutes on each side, or until the chicken is cooked through and no longer pink in the center. The cooking time may vary depending on the thickness of the chicken breast.

  5. Once cooked, remove the chicken from the skillet and let it rest for a few minutes.

  6. Serve the Tarragon Chicken hot and garnish with additional fresh tarragon, if desired.
