Ingredients
2 medium-sized sweet potatoes, peeled and cubed
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, finely sliced
1/4 cup feta cheese, crumbled (optional)
1/4 cup chopped fresh parsley
1/4 cup extra-virgin olive oil
2 tablespoons apple cider vinegar
1 teaspoon Dijon mustard
Salt and pepper to taste

Directions
Boil or steam sweet potato cubes until tender. Drain and let them cool.
In a large bowl, combine sweet potatoes, cherry tomatoes, cucumber, red onion, and feta cheese.
In a separate small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, salt, and pepper to create the dressing.
Pour the dressing over the salad and toss gently to coat.
Top the salad with grilled chicken slices and fresh parsley.
