Ingredients
2 boneless, skinless chicken breasts
Salt and pepper to taste
2 tablespoons olive oil
1 head Romaine lettuce, washed and torn into pieces
1/2 cup walnuts, toasted
1/4 cup grated Parmesan cheese
For the Dressing:
1 clove garlic, minced
2 tablespoons lemon juice
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1/2 cup olive oil
Salt and pepper to taste
Directions
Season the chicken breasts with salt and pepper on both sides.
Heat the olive oil in a pan over medium heat. Add the chicken and cook for about 6-7 minutes on each side, or until the chicken is cooked through and no longer pink inside. Remove from heat and let it cool.
While the chicken is cooling, prepare the dressing. In a small bowl, whisk together the garlic, lemon juice, Dijon mustard, and Worcestershire sauce. Gradually whisk in the olive oil until well combined. Season with salt and pepper.
Slice the cooled chicken into thin strips.
In a large bowl, combine the lettuce, sliced chicken, toasted walnuts, and Parmesan cheese. Drizzle the dressing over the salad and toss until everything is well coated.
