4 salmon fillets (wild-caught, if possible)
2 medium-sized sweet potatoes, peeled and diced
2 cups broccoli florets
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon dried thyme
Salt and pepper to taste
Fresh lemon wedges for serving
Directions
Preheat your oven to 400°F (200°C).
Place the salmon fillets on a baking sheet lined with parchment paper. Season with salt, pepper, smoked paprika, and dried thyme.
In a bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, minced garlic, salt, and pepper. Spread them out on the baking sheet next to the salmon.
Bake the salmon and sweet potatoes for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.
While the salmon and sweet potatoes are baking, steam the broccoli until tender-crisp, about 5-7 minutes.
Once everything is cooked, assemble your plate with a salmon fillet, a serving of sweet potatoes, and a side of steamed broccoli.
Drizzle the remaining olive oil over the salmon and vegetables and serve with fresh lemon wedges.
